Aggy Villabona
Coming from Pampanga, one of the prominent culinary provinces in the Philippines, Chef Aggy was brought up in the world of food. She signed up to take classes at the Heny Sison Culinary School because she wanted to improve her craft and expand her culinary horizons. It is good to note that Chef Aggy was one of Chef Heny’s first graduates. It didn’t take long before she herself wanted to share her knowledge through teaching. “If I were a dessert, I would be a pie. You can fill a crust with anything and the possibilities are endless, yet it is so simple and unpretentious,” she says of her thirst to keep learning. Her bakeshop, Aggy’s Cakes & Sweets, has been around for more than two decades, and you will find that she has three flourishing branches in the south of Metro Manila. On the side, Chef Aggy dabbles in some consultancy work for other bakeshops specializing in-store operations and product development. She is also a wholesale supplier of bread, pastries, and cakes for coffee shops, convenience stores, and groceries.
